On the windswept plateau where Madrid is perched, it's too dry to raise cattle and most crops. So pork has long been a mainstay, from jamón ibérico and charcuterie tapas to stews of pigs' ears and entrails.

But when locals want a really special treat, they go for an entire piglet roasted whole — head, hooves and all — on an oak wood fire.

Tlacoyos: A Mexican Grilled Snack That Tempted The Conquistadors

Tlacoyos can be filled with beans, potatoes, mushrooms or cheese and are often topped with grilled cactus, onions, cilantro, and salsa.

For the last in a summer series of grilled food from around the world, we head to Mexico, where a small doughy treat is found everywhere from street corner grills to high-end restaurants. It's called a tlacoyo (pronounced tla-COY-yo) and although it may sound novel, it's an ancient food that's older than Hernan Cortes.

'Braai Day' Aims To Bring S. Africans Together Over Barbecue

Jan Scannell, former accountant, has taken on a new identity as "Jan Braai," a South African TV show host and media personality promoting the idea of National Braai (barbecuing) Day, celebrated each year on Sept. 24.

Nelson Mandela is officially "improving," though still in critical condition at a South African hospital. His long battle with a lung infection has South Africans anxiously contemplating their "post-Mandela" future in a still racially divided country. In a unique strategy, one man is hoping to help heal those divisions with a pair of barbecue tongs.

Jan Scannell is a 32-year-old former accountant with a dream: To establish a national holiday in South Africa like July 4 called Braai Day.

When you hear the word "kebab" in America, you might think of skewers with chunks of chicken or beef and vegetables, marinated and grilled on coals or gas. But say "kebab" in the Middle East, and it means a lot of things — chunks of lamb or liver on skewers, or the more popular version of grilled ground meat logs found in Turkey, Iran and much of the Arab world.

Each morning as dawn breaks over the Bosphorus Strait in Turkey, a small drama repeats itself: Massive oil tankers and cargo ships slide past tiny fishing boats bobbing on the surface like bathtub toys.

These intrepid fishermen are out in all weather, in all seasons. In the winter, they catch the rich, oily anchovies, bluefish and mackerel. With spring come the turbot and sea bream, and by summer, sea bass and red mullet are being hawked by the fishmongers.
